Dairy-Free Tahini Ice Cream

Equipment

  • Ice Cream Maker

Ingredients
  

  • 3/4 cup organic cane sugar or jaggery sugar
  • 6 medium or large egg yolks
  • 1/4 teaspoon mineral-rich salt
  • 1 cup minus one Tbs coconut cream
  • 1 cup non-dairy milk or non-dairy creamer
  • 1/3 cup plus one Tbs raw tahini
  • 1/2 teaspoon ground cardamom

Instructions
 

  • Combine the sugar, egg yolks, and salt in a medium-sized saucepan.
  • Whisk in the coconut cream and dairy-free milk until smooth.
  • Put the saucepan over low-medium heat and cook until the mixture becomes warm.
  • Increase the temperature to medium. Cook until the mixture steaming but not bubbling (about 8 minutes).
  • Remove from heat. Whisk in the tahini and cardamom until smooth. 
  • Let the mixture cool completely. Refrigerate until cold – overnight or for at least 6 hours.
  • Churn for 20 to 25 minutes, according to your ice cream maker's instructions.
  • Freeze and enjoy! Makes about 3 1/2 cups.
