Portobello Mushroom Burger

With a bun or without a bun… that is the question! You need digestive enzymes to break down animal protein and starchy carbs in your stomach. But when you eat thosetwo foods together, enzymes have to compete for “what gets broken down first.”This phenomenon can cause gas, bloating, indigestion, and inflammation.
So for optimal digestion, this mini-masterpiece comes wrapped in portobello mushrooms instead of bread – and tastes absolutely delicious. Enjoy!

Ingredients
  

  • 2 medium Portobello Mushrooms stems removed
  • 2 teaspoons rice bran oil, grapeseed oil, or olive oil
  • ½ teaspoon hemp seeds
  • 2 pinches salt
  • 1 to 2 Tablespoons mashed avocado or Ayurveda-Inspired Guacamole [insert link to this recipe]
  • 1 to 2 teaspoons ground mustard
  • 1 to 2 teaspoons Vegenaise
  • ¼ pound lamb beef, or lentil burger patty
  • 1 to 2 leaves butter lettuce or green leaf lettuce
  • 1 to 2 slices of red onion
  • 2 slices heirloom tomato
  • ¼ cup sunflower sprouts

Instructions
 

  • Preheat the oven to 350 degrees and cover a baking sheet with parchment paper.
  • Put the mushrooms on the parchment paper, stem side down.
  • Brush the top of each mushroom with 1 teaspoon of rice bran oil, coating each cap entirely.
  • Sprinkle with hemp seeds and salt. Bake for 10 minutes, or until the mushrooms are browned and tender.
  • Remove the mushrooms from heat. Place them stem side up on a plate.
  • Put the mustard, Vegenaise, mashed avocado, and burger on top of one mushroom. Top the other mushroom with lettuce, onion, tomato, and sprouts.
  • Gather the two sides together and enjoy! If it’s too messy, enjoy with an old-fashioned fork and knife.

Notes

Note: This recipe slightly increases Pitta and Kapha. To reduce the Pitta dosha, reduce the amount of rice bran oil and salt by half, use the lesser amount of Vegenaise, and only include the red onion if it’s cooked or grilled. To reduce the Kapha dosha, use only 1 Tablespoon of mashed avocado, reduce the amount of rice bran oil and salt by half, and use the lesser amount of Vegenaise.
