California Kraut Salad

Massage raw kale with mineral-rich salt and lemon juice to tenderize the kale leaves and makes them easy to digest.
I leave the stems intact for their nutrient density, but you can tear off the leaves or slice out the stems with a sharp knife if you want to. If you want to make this salad last for a few days, store the lettuce, jicama, and sunflower sprouts separately and mix them in when you’re ready to dig in.

Ingredients
  

  • 4 cups finely chopped kale
  • ¼ teaspoon mineral-rich salt
  • 2 cups shredded red leaf lettuce
  • ½ cup peeled, grated jicama
  • ½ carrot, golden beet, or daikon radish, grated
  • ½ cup sunflower sprouts optional
  • ¼ cup minced red onion
  • 1 cup raw sauerkraut
  • ½ cup olive oil
  • 2 teaspoons fennel seed or cumin seed
  • 8 fresh nasturtium flowers, stemmed optional

Instructions
 

  • Put the kale and salt in a large, non-metallic bowl. Massage with your hands for 20 seconds.
  • Mix in the lettuce, jicama, carrot, sprouts (if using), and onion.
  • Add the sauerkraut, oil, and fennel. Toss well. Garnish with the flowers (if using) and serve.

Notes

Ayurveda Every Day Tip: To reduce Vata, double the kale but lightly steam it after chopping and omit the onion altogether. To reduce Pitta, omit the onion and halve the kraut.
